Humble Pies started in 2013 with a simple idea: make real, honest pies — the kind you’d be proud to put on the table at home.

I’m Darran Ridley, a chef with 25+ years in kitchens around the world, from fine dining to large-scale operations at sea.
Over the years I’ve worked across multiple cruise lines in senior culinary roles, leading teams, developing menus, and building food that delivers every single service. But Humble Pies has always been personal: it’s about comfort food done properly — rich fillings, great gravy, and pastry that eats the way it should.

Where it Began (and the Flavours That Shaped It)
Before Humble Pies, I worked as a Development Chef for Gordon Ramsay, supporting recipe and menu development across multiple venues. That time shaped how I build flavour: layered, balanced, and never fussy for the sake of it. When Humble Pies launched, those were the foundations — classic recipes, developed properly, tested hard, and made to taste like you remember.

Awards From Our Very First Year
In our first year, we entered Taste of the West and came away with five awards for our pies — four silvers and a bronze. It was a huge moment for us, because it proved what we believed from day one: if you focus on flavour, consistency, and quality, people notice.
Fast forward to Koh Samui
Today, Humble Pies has moved to Koh Samui, but the heart of it hasn’t changed.

We’re still using the same core recipes developed back in the early days — the same flavour building, the same slow-cooked approach, and the same “don’t cut corners” mindset. The difference today is that Humble Pies is led on the ground by my wife, Worada — bringing the same recipes to life with her own care, precision, and consistency.
Humble Pies is a family business in the truest sense: it’s our name, our standards, and our food.
